– Breading:
– 1/2 cup all-purpose flour
– 1/2 cup cornstarch
– 1/2 cup panko breadcrumbs
– 1/4 teaspoon salt
– 1/4 teaspoon garlic powder (optional)
– Curry Sauce:
– 2 tablespoons vegetable oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 medium carrot, peeled and grated
– 1 medium potato, peeled and diced
– 1 tablespoon curry powder
– 1 tablespoon soy sauce
– 1 teaspoon maple syrup
– 600-800ml vegetable stock
👩🍳 Instructions
Prepare the Tofu
1. Press the Tofu: Wrap the tofu in paper towels and press under a heavy object for 15 minutes to remove excess moisture.
2. Cut the Tofu: Cut the tofu into 3/4 inch thick slabs or rectangles.
Prepare the Breading
1. Mix the Flour Mixture: Whisk together flour, cornstarch, salt, and garlic powder (if using).
2. Prepare the Breading Station: Place the flour mixture, egg wash (or aquafaba), and panko breadcrumbs in separate shallow dishes.
Bread the Tofu
1. Coat with Flour Mixture: Coat each tofu piece in the flour mixture, shaking off excess.
2. Dip in Egg Wash: Dip the flour-coated tofu in the egg wash, making sure it’s fully coated.
3. Coat with Panko Breadcrumbs: Coat the tofu in panko breadcrumbs, pressing gently to adhere.
Air Fry the Tofu
1. Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C).
2. Air Fry the Tofu: Place the breaded tofu in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Make the Curry Sauce
1. Sauté the Onion: Heat oil in a large saucepan over medium heat. Sauté the onion until softened.
2. Add Garlic and Carrot: Add garlic and carrot. Cook for a few minutes.
3. Add Curry Powder and Stock: Add curry powder, soy sauce, and vegetable stock. Simmer until the sauce thickens.
Serve
1. Serve the Tofu: Serve the air-fried tofu katsu with curry sauce and steamed rice.
