You simply can’t go wrong with this easy, low carb and Optavia friendly recipe for Creamy Mediterranean Chicken & Mushrooms!

A quick meal, easy enough for weeknights but decadent enough for a dinner party, our creamy chicken recipe is healthy and satisfying.

Serve over cauliflower rice or zucchini noodles for a complete low carb meal, or alongside egg noodles or mashed potatoes if you’re not counting carbs. No matter how you serve it, we promise you’ll love it!

  • 2 pounds chicken breast cutlets, sliced or pounded thin
  • 1 tsp Stacey Hawkins Dash of Desperation Seasoning
  • 4 tsp  Roasted Garlic Oil
  • 12 ounces mixed mushrooms, sliced and woody stems removed
  • ½ C chicken broth
  • ½ C Half and Half
  • 2 tsp  Mediterranean Seasoning


  1. Sprinkle chicken with Dash of Desperation Seasoning. Ad oil to a large skillet over medium heat. Cook the chicken until browned and just cooked, about 7-10 minutes. Transfer to a plate, cover and keep warm.
  2. Add the mushrooms to the pan. Season with Dash of Desperation Seasoning and cook, stirring occasionally until slightly browned, about 4 minutes.
  3. Increase the heat to high, add chicken broth and cook until mostly evaporated. Reduce heat to medium, add half and half (and any juice from the chicken plate) and Mediterranean Seasoning. Simmer until reduced by half.
  4. Add the chicken back to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and accompanied with your choice of side dishes. Enjoy!
