Slimming World pancakes

Are they American pancakes? Are they Scotch pancakes? Whatever your take, a stack of these light, fluffy pancakes will hit the spot!

Serves 4


  • 1 large ripe banana, peeled
  • 2 medium eggs, beaten
  • 2 level tbsp self-raising flour
  • Low-calorie cooking spray
  • 200g fresh or frozen mixed berries (defrosted if frozen), to serve
  • 100g fat-free natural fromage frais, to serve


    1. Mash the banana in a bowl with a fork until smooth, then stir in the eggs and the flour.
    2. Spray a small non-stick, heart-shape frying pan with low-calorie cooking spray and put it over a medium heat.
    3. Pour a twelfth of the pancake mixture into the pan and cook for 1 minute, or until the base is golden brown. Flip it over then cook for a further 1-2 minutes, or until golden and cooked through. Keep warm while you make 11 more pancakes. Serve 3 pancakes per person with the berries and fromage frais, and dust over the cinnamon.
