There are some chicken recipes that become regulars simply because they are easy enough for a busy day and still taste like you put a lot of effort into them. This lemon garlic chicken is one of those recipes. It comes together quickly, but the short cooking time doesn’t mean you have to compromise on flavour.
The chicken is first coated in a simple marinade made with lemon zest, lemon juice, garlic, crushed pepper, Kashmiri chilli powder, honey, salt, and olive oil. The lemon zest is especially important here. It gives the chicken a fresh citrus aroma that you don’t get from lemon juice alone.
I like making this with boneless chicken thighs because they stay juicy in the air fryer. The chicken is cut into small pieces, marinated, threaded onto skewers, and then cooked at a high temperature until the edges turn lightly golden. Make the Lemon Garlic Marinade
- Add the lemon zest, lemon juice, grated garlic, crushed pepper, Kashmiri chilli powder, honey, salt, and olive oil to the chicken.
- Toss everything well so that the marinade coats every piece. Don’t just stir the ingredients around the bowl; make sure the chicken is properly covered because that is where all the flavour will come from.
- The combination might look simple, but each ingredient has a job. Lemon adds acidity and freshness, garlic gives the chicken its savoury flavour, chilli powder adds colour and mild heat, and honey helps balance the sharpness of the lemon.
Give the Marinade Time
- Once the chicken is coated, cover it and leave it to marinate for at least one hour.
- This is one step I wouldn’t rush. The chicken needs time to absorb the lemon and garlic flavours. If you’re preparing dinner ahead of time, the chicken can also be marinated overnight and kept refrigerated.
- The longer marinating time is particularly useful when you want the flavour to reach beyond the surface of the chicken.
Don’t Leave Out the Lemon Zest
- It might be tempting to use only lemon juice, especially since both ingredients come from the same fruit, but they don’t contribute exactly the same thing.
- Lemon zest contains concentrated citrus oils, which give the chicken a much stronger lemon aroma. The juice provides acidity and lemon flavour, while the zest brings that fragrant citrus note.
- There is also lemon zest in the herb butter, so the flavour gets another little boost right before serving.
Making the Herb Butter
- While the chicken is marinating, the herb butter can be prepared.
- Take 1 ½ tablespoons of soft butter in a small bowl. Add 2 teaspoons lemon zest and 2 teaspoons finely chopped coriander leaves.
- Mix everything together until the zest and coriander are evenly distributed through the butter.
- Set it aside while the chicken cooks.
- Using soft butter makes this step easier because the ingredients mix together without needing to melt the butter. Keeping the butter soft also makes it easy to brush or spread over the hot chicken once it comes out of the air fryer.
Preparing the Air Fryer
- When the chicken has finished marinating, preheat the air fryer to 200°C.
- While it is heating, brush the air fryer basket with a little groundnut oil or another neutral cooking oil.
- This helps prevent the chicken from sticking and also gives the surface of the chicken a little extra help with browning.
Air Frying the Chicken
- Brush the chicken with about a teaspoon of cooking oil before putting it in the air fryer.
- Cook at 200°C for 3 minutes.
- After the first 3 minutes, carefully turn the skewers over. Brush the chicken with more oil and return the skewers to the air fryer.
- Continue cooking at 200°C for another 3–5 minutes, or until the chicken is cooked through and the edges are slightly browned.
- The exact cooking time can vary depending on the size of the chicken pieces and your particular air fryer, so check the thickest pieces before taking the chicken out.
- The goal is juicy chicken with lightly browned edges rather than deeply charred pieces.
Why Brushing With Oil Matters
- There are two points where the oil is useful: before cooking and after flipping.
- A light coating helps the surface brown more evenly and prevents the outside from becoming overly dry during the high-temperature cooking process.
- You don’t need a lot of oil. The chicken already has olive oil in the marinade, so just a small amount for brushing the basket and chicken is enough.
Finish With Herb Butter
- As soon as the chicken comes out of the air fryer, brush it with the prepared herb butter.
- This is best done while the chicken is still hot. The heat softens and melts the butter, allowing the lemon zest and coriander to spread over the chicken.
- The herb butter also gives the chicken a fresh, rich finish without making the marinade complicated.
- The combination of warm chicken, melted butter, lemon zest, and coriander is what brings the whole recipe together.
A Few Things That Make a Differenc
- Marinate for at Least an Hour
- The chicken should have enough time to absorb the marinade. One hour is the minimum recommended time, while overnight refrigeration works well when you’re preparing ahead.
- Use Chicken Thighs
- Boneless chicken thighs are better suited to this recipe because they stay tender and juicy during air frying. The original recipe specifically uses thighs rather than breast pieces.
- Keep Space Between the Pieces
- Don’t overcrowd the skewers or basket. The air fryer relies on hot air circulation, so the chicken needs room around it.
- Use Lemon Zest Twice
- The zest goes into both the marinade and the herb butter. This is intentional. It gives the finished chicken a much more noticeable lemon aroma.
- Butter the Chicken While It’s Hot
- Don’t wait for the chicken to cool completely. The herb butter works best when it can melt over the freshly cooked pieces.
How I Like to Serve It
- This chicken can easily work as a starter, but it can also become part of a full meal.
- For something simple, serve the skewers as they are with a squeeze of lemon. You can also slide the chicken off the skewers and put it into warm pita with hummus.
- A fresh chickpea salad is another good pairing, especially if you want to keep the meal light. If you’re looking for something more filling, the chicken can be served alongside egg fried rice.
- And honestly, it doesn’t need much at all. Freshly cooked chicken, a little lemon, and something cold to drink are enough for an easy meal.
Storing Leftovers
- If there is leftover chicken, let it cool and place it in an airtight container. It can be refrigerated for up to 2 days.
- The lemon and garlic flavours hold up well, so the chicken is still enjoyable the next day.
Freezing the Marinated Chicken
- The uncooked marinated chicken can also be frozen for up to two weeks.
- When you’re ready to cook it, thaw the chicken overnight in the refrigerator. Thread it onto skewers and air fry it fresh.
- The herb butter is best prepared fresh when you’re ready to serve.
Reheating
- For reheating, place the cooked chicken back in the air fryer at 180°C for 2–3 minutes, just until warmed through.
