High-Protein Cheesecake Jars

When I want something sweet but don’t want to turn on the oven, these high-protein cheesecake jars are one of the easiest desserts to make. They come together in about 15 minutes, use only five ingredients, and have a creamy cheesecake-like filling with layers of crunchy graham crackers and fresh berries.

The texture is not exactly the same as a traditional baked cheesecake, but it comes surprisingly close. The cottage cheese gives the filling plenty of protein, while blending it until smooth makes it creamy enough to work beautifully in a cheesecake-style dessert. Greek yogurt adds even more protein along with a thick, tangy texture.

Each serving has about 30 grams of protein, so these jars are a nice option when you want a dessert that feels a little more substantial.

There is also no complicated baking process here. There’s no crust to press into a pan, no water bath, and no waiting for a cheesecake to bake and cool. Everything is prepared separately and then layered directly into jars.

Why These Cheesecake Jars Work So Well

  • The best part of this recipe is how simple it is. There are only five ingredients to prepare, and most of the work is simply blending, mixing, and assembling.
  • The cottage cheese is the base of the cheesecake mixture. It has a mild flavor and becomes much smoother when blended on its own. Greek yogurt is then folded in to give the mixture a thick and creamy consistency.
  • Maple syrup adds sweetness without requiring another ingredient or a complicated sweetener mixture. Real maple syrup works best here because it has a deeper flavor than pancake syrup.
  • The graham crackers provide the familiar cheesecake crust flavor. Instead of making a separate crust, I simply crush the crackers and use them as one of the layers. This keeps the recipe quick and gives every spoonful some crunch.
  • Finally, berries add freshness and a little natural sweetness. Strawberries work especially well, but other berries or fruit can be used too.

What You Need

  • Cottage Cheese
  • For the creamiest result, use 2% milk-fat cottage cheese. Cottage cheese can have different curd sizes and milk-fat levels, so the texture can vary from one container to another.
  • The important part of this recipe is blending the cottage cheese until it becomes smooth. Straight from the container, cottage cheese has visible curds, but after blending for a minute or two, it becomes much creamier.
  • I recommend blending the cottage cheese by itself rather than adding the Greek yogurt at the same time. This gives the food processor a chance to break down all those little curds properly.
  • Greek Yogurt
  • Full-fat plain Greek yogurt works especially well because it makes the cheesecake filling rich and creamy. Low-fat Greek yogurt can also be used if that is what you have available.
  • Greek yogurt is thicker than regular yogurt, which helps the finished filling maintain a cheesecake-like consistency rather than becoming too loose.
  • Maple Syrup
  • Real maple syrup adds the sweetness to the cheesecake mixture. Honey can also be used instead if that is what you prefer.
  • If using maple syrup, make sure it is real maple syrup rather than pancake syrup. The flavor is more natural and works nicely with the tanginess of the cottage cheese and Greek yogurt.
  • Graham Crackers
  • Crushed graham crackers take the place of a traditional cheesecake crust. I like crushing them myself because I can leave some pieces slightly larger for extra texture, but ready-made graham cracker crumbs are perfectly fine too.
  • You can also adjust the amount slightly when assembling the jars depending on how much crust flavor and crunch you want in each serving.
  • Berries
  • Strawberries are a simple choice for these jars, but you don’t have to stick with them. Use whatever berries or fruit you enjoy.
  • Fresh berries work particularly well because they add a bright contrast to the creamy filling. You can add them between the layers and use a few extra on top when serving.

Start by Making the Cheesecake Filling

  • The most important step is getting the cottage cheese smooth.
  • Add the cottage cheese to a large food processor and blend it for 1 to 2 minutes. Keep blending until it looks smooth and creamy. Depending on your food processor, you may need to stop and scrape down the sides once.
  • Don’t rush this step. If the cottage cheese still looks lumpy, continue blending until most of the curds have disappeared.
  • Once the cottage cheese is smooth, add the maple syrup and blend again until it is incorporated.
  • At this point, the mixture should look creamy and smooth.

Add the Greek Yogurt

  • Transfer the blended cottage cheese mixture to a mixing bowl.
  • Add the Greek yogurt and gently mix everything together with a silicone spatula. Stir until the yogurt is evenly incorporated and the mixture has a consistent texture.
  • I prefer doing this in a bowl instead of putting the cottage cheese and Greek yogurt together in the food processor. Blending the cottage cheese first gives it a much smoother texture, while mixing in the Greek yogurt afterward keeps the process simple.
  • The finished cheesecake mixture should be thick, creamy, and easy to spoon into the jars.

Prepare the Graham Crackers and Berries

  • While the cheesecake mixture is ready, have the crushed graham crackers and berries nearby.
  • If you’re crushing the graham crackers yourself, break them into smaller pieces and crush them until you have crumbs with a little texture. They don’t have to be perfectly fine.
  • Prepare the berries by cutting larger ones into smaller pieces if necessary. Strawberries can be sliced or chopped into bite-sized pieces.
  • Having everything ready before assembling makes the layering process much easier.

Build the Cheesecake Jars

  • Now comes the fun part.
  • Take your jars and start with a layer of crushed graham crackers. Add enough to cover the bottom without pressing them down too firmly.
  • Next, add a layer of the cheesecake mixture.
  • Follow that with another layer of graham crackers, then add the berries.
  • Finish with another layer of the cheesecake mixture.
  • The basic order is:
  • Graham crackers → cheesecake mixture → graham crackers → berries → cheesecake mixture
  • You don’t have to make every layer perfectly even. These are individual dessert jars, so a relaxed, homemade appearance works perfectly.
  • Once the jars are assembled, add a few more berries on top if you’d like.

Serving the Cheesecake Jars

  • These can be served immediately once they’re assembled. Since there is no baking or complicated setting process, they are ready as soon as the layers are finished.
  • For a slightly more chilled dessert, you can keep the jars in the refrigerator before serving.
  • The combination of creamy cheesecake filling, crunchy graham crackers, and fresh berries makes each spoonful a little different. The berries also keep the dessert from feeling overly rich.
  • These jars are especially convenient when you want individual portions rather than making one large cheesecake.

Easy Ways to Adjust the Jars

  • One of the nice things about assembling the dessert in individual jars is that the portions can be adjusted.
  • The recipe makes about four servings, but smaller jars can be used to create additional portions. Simply use less of each component in each jar.
  • You can also change the amount of graham cracker crumbs depending on how much crunch you want. If you love a crust-like layer, add a little more. If you prefer the cheesecake filling to be the main part of the dessert, use a little less.
  • The fruit can also be changed. Strawberries are the suggested choice here, but other berries or fruit can be used according to what you have on hand.

A Few Things to Keep in Mind

  • The texture of the cheesecake filling depends heavily on how well the cottage cheese is blended. This is why I don’t combine the cottage cheese and Greek yogurt in the food processor from the beginning.
  • Blending the cottage cheese alone gives the food processor a better chance to break down the curds and create a smooth base. Once it is creamy, the Greek yogurt can be stirred in by hand.
  • Another thing to remember is that this is a no-bake cheesecake-style dessert. It is meant to be quick and easy rather than an exact replacement for a traditional baked cheesecake.
  • The graham cracker layers also don’t need to be perfectly measured into each jar. The amount can be adjusted to suit the size of your jars and your preference.

Making Them Ahead

  • These cheesecake jars are convenient for preparing ahead of time. Keep the assembled jars covered in the refrigerator and use them within 3 days.
  • If you’re preparing them ahead for several days, jars with lids make storage especially easy. Keep them refrigerated until you’re ready to eat them.
  • I wouldn’t recommend freezing these cheesecake jars. The texture of the dairy-based filling and the other components can change after freezing and thawing, so refrigeration is the better option.

The Finished Dessert

  • Once the jars are assembled, you have a simple dessert with layers of creamy protein-rich cheesecake filling, crunchy graham crackers, and fresh berries.
  • There is no oven involved and no long preparation process. The cottage cheese and Greek yogurt create the creamy base, maple syrup adds sweetness, graham crackers bring the crust-like texture, and berries finish everything with a fresh fruit layer.
  • For a quick homemade dessert, these jars are hard to beat. They are simple enough for an everyday sweet craving but also look nice when served individually.
  • The key is really just to take your time with the cottage cheese. Blend it until smooth, mix in the Greek yogurt afterward, and then layer everything into the jars. From there, the dessert is ready to enjoy.
