Ingredients

Beef:

  • 13oz (400g) beef rump steak, trimmed and thinly sliced

  • 1 1/2 tbsp peanut oil (divided for stir-frying)

Stir-Fry Vegetables:

  • 1 1/2 tbsp peanut oil (for cooking)
  • 2 garlic cloves, finely crushed
  • 1 small onion (yellow, white, or brown), thinly sliced
  • 1 red bell pepper (capsicum), sliced into strips
  • 1/3 cup homemade Chinese stir-fry sauce
  • 3/4 cup water
  • 2 tbsp chili paste (adjust based on your heat preference, or use sriracha/hot sauce)
  • 3 scallions/shallots, sliced into 3 cm sections
  • 7oz (200g) snow peas, trimmed
  • 15oz (450g) fresh Hokkien noodles (available in the refrigerated section)

Garnish (optional):

  • Sliced red chili
  • Extra scallions/shallots
  • Toasted sesame seeds

How To Make

Step 1: Marinate the Beef Start by marinating the beef for enhanced flavor. In a glass or ceramic bowl, combine the thinly sliced beef with 2 tablespoons of homemade Chinese stir-fry sauce. Mix well, ensuring the beef is well-coated. Allow it to marinate for about 20 minutes.

Step 2: Cook the Noodles While the beef is marinating, prepare the noodles. Cook them according to the package instructions. Once cooked, drain the noodles in a colander and rinse under cold water to remove excess starch. This step is crucial as it helps to avoid the noodles becoming too sticky. Set the noodles aside after shaking off the excess water.

Step 3: Cook the Beef Heat 1 1/2 tablespoons of peanut oil in a large wok or frying pan over high heat. Add the marinated beef and stir-fry for about 1 1/2 minutes, just until the beef is cooked through. Once done, transfer the beef to a bowl and set aside.

Step 6: Combine Beef, Vegetables, and Noodles Now, return the cooked beef and bell pepper mixture to the wok. Add the cooked noodles and toss everything together, stirring continuously for 1-2 minutes to ensure the noodles are well-coated with the sauce and all ingredients are heated through.
