Healthy No-Bake Salted Caramel Cheesecake Shooters

These no-bake salted caramel cheesecake shooters are one of those desserts that look much more complicated than they actually are. They have a creamy cheesecake layer, buttery pecans, and a homemade salted caramel sauce, all tucked into small serving glasses.

I like making them when I want something that feels special without turning on the oven. Because the portions are small, they also make a nice choice when I want to serve dessert after a meal without putting a large slice of cheesecake in front of everyone.

The little glasses make the dessert especially appealing. Each spoonful brings together the smooth cheesecake filling, crunchy pecans, and caramel. The salted caramel adds just enough contrast to keep the dessert from tasting one-dimensional.

The Easiest Way to Fill the Glasses

  • Trying to spoon a soft cheesecake filling neatly into tiny glasses can get messy. A pastry bag makes the job much easier.
  • A decorative pastry tip is optional. The filling doesn’t need to have a fancy shape because it will be layered with caramel and pecans.
  • If I don’t have a pastry bag available, a zip-close plastic bag works just as well.
  • Cut a small piece from one bottom corner of the bag. A hole about 1/4 to 1/2 inch is enough. It is better to start small because you can always make the opening slightly larger if needed.

Ingredients

  • 4 oz. Neufchatel cheese, softened* (can use full fat too)

  • 1/4 cup Swerve Brown***

  • 1 tsp. vanilla extract

  • 1/2 cup heavy whipping cream

  • 2 Tbsp butter

  • 1/4 cup allulose 

  • 3 Tbsp heavy whipping cream

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 Tbsp butter, melted

  • 6 Tbsp finely chopped pecans

Directions

  • Make the Caramel
    Melt the butter in a thick-bottomed saucepan or nonstick skillet over medium heat. Add the allulose and whisk continuously until completely incorporated and smooth.
    Let the mixture simmer, whisking every 15 to 30 seconds, until it becomes light golden brown, about 2 minutes. Watch closely so it doesn’t burn.
    While whisking, add the whipping cream. The sauce will bubble up. Continue whisking for 30 to 60 seconds, until the bubbling slows.
    Remove from the heat and stir in the vanilla extract and salt. Set aside to cool. The caramel will thicken as it cools.
  • Prepare the Cheesecake Filling
    Beat the softened Neufchatel cheese, Swerve Brown, and vanilla extract in a mixing bowl until smooth.
    In a separate bowl, beat the heavy whipping cream until stiff peaks form.
    Gently fold the whipped cream into the cream cheese mixture by hand.
